The simplest way to make the best veggie pizza
My favorite place for eating pizza is Guli in Skadarlija, for those who know Belgrade. I will always recommend this place for service and of course due to its very dynamic menu.
Aside from being my favorite place, this post does not have to be a commercial for Guli, but to give you a recipe for a cauliflower veggie pizza.
components
- 1 cauliflower head, roughly chopped
- 300 gr mushrooms
- 1 bigger red bell pepper
- 1/2 cup fresh basil
- pepper according to your taste
- salt according to your taste
- 210 gr shredded mozzarella
- 2 egg whites
- 6 Tbsp grated Parmesan
- 3 cup cherry tomatoes
- 2 tsp olive oil
- 2 tsp olive oil
- 3 garlic cloves, minced
- Optionally: baby spinach
Instruction
- Cauliflower head has to be cleaned, roughly chopped and put in a food processor; pulse to 15 times until you got a rice texture.
- Then transfer cauliflower to a baking sheet lined with the parchment paper and coat with baking spray. Bake at 170°C for 25 minutes, stirring once.
- While cauliflower is baking you may clean mushrooms and pepper ... cut everything into pieces and pour into the frying pan for about 5 minutes.
- Now the cauliflower is already been enough in the oven...take them out and place cauliflower in a clean kitchen towel. Squeeze until very dry.
- In a separate bowl combine cauliflower, remaining 1 teaspoon of oil, basil, black pepper, salt, 3 garlic cloves, half of measure mozzarella cheese, two egg whites and parmesan cheese.
- Again press cauliflower mixture on a baking sheets lined again with parchment paper. Bake crust at 200°C for max 20 minutes
- After first 10 minutes cover crust with mushroom mixture, remaining mozzarella, tomato and baked another 10 minutes.
- Optionally add baby spinach or basil and bake no more than 5 minutes after that.
But what kind of veggie pizza?
Well, well, the best possible that you can imagine … you will not even notice the difference.

Yes, you read well 🙂 there is no more painful mixing of dough and searching for a special flour from which you will get the best dough for pizza.

Then transfer cauliflower to a baking sheet lined with the parchment paper and coat with baking spray. Bake at 170°C for 20-25 minutes, stirring once.
Of course, after the first fifteen minutes of baking, check the oven, you don’t want to burn cauliflower.
Don’t lose you time, while cauliflower is baking you may clean mushrooms and pepper … cut everything into pieces and pour into the frying pan for about 5 minutes.
Until tender…
Until now the cauliflower has been enough in the oven…take them out and place cauliflower in a clean kitchen towel. Squeeze until very dry.
On the other side, combine cauliflower, remaining 1 teaspoon of oil, basil, black pepper, salt, garlic, mozzarella cheese, egg whites and parmesan cheese in a bowl.
Again press cauliflower mixture on a baking sheets lined again with parchment paper. Bake crust at 200°C for 10 minutes.
After first 10 minutes only is left to cover crust with mushroom mixture, remaining mozzarella, tomato and finish baking with another 10 minutes in the oven.
Optionally you may add baby spinach on top or fresh basil leaves 5 minutes before the end of the final 10 minutes of baking.
After all written steps you can enjoy the taste of this simple and delicious pizza 🙂
That is the simplest way to have the healthiest pizza in the world.
