Modern and very delicious raw date truffles recipe
Raw cakes were also popular back when my grandma used to make them. After that time, they sort of disappeared.
And then they were back in fashion, just more improved 🙂
components
- 2 cups of nuts (almond, walnuts, hazelnuts ..what ever you have)
- 1,5 cup Medjool dates
- 3 Tbsp of almond butter (optionally some other butter)
- pinch of salt
- 1 tsp cocoa powder + 3-4 tsps for rolling
- 1 tsp of vanilla extract (or vanilla aroma)
Instruction
- Remove pits from dates.
- Place all the nuts together, dates, almond butter, cocoa powder, salt and vanilla extract in the bowl of a food processor. Process about 1 minute; check to ensure mixture is sticky.
- Shaped the entire mixture into balls, the diameter 2,5 cm-3 cm.
- Rolled them into cocoa powder and serve.

I have been exploring and making raw cakes, cookies, and truffles for some time now. Besides being quick and easy to make, they look excellent and taste fantastic.
On the other hand, they give me an illusion of eating healthy…which makes it easier for my heart and my belly when I eat 10 at once 🙂
This recipe is pretty basic for these kinds of raw cookies. It can basically be modified with all sorts of spices and flavours so that we can get several kinds of raw truffles all from the same mixture.
It’s an excellent choice when your friends come to visit or for fasting celebrations that are about to come in the next period.
Raw date truffles recipe
They can be made in only a few steps.
The only thing we actually need is a blender for cutting.
From the ingredients…you can combine leftover nuts from all the complex cakes and pastries you made.
For this raw cake, I mixed almonds and hazelnuts in equal measure. You can certainly spoil that measure depending on the flavour you like better. Or you can add a new one.
For example, you can add a bit of hot pepper 🙂 Mixing it with chocolate must be good 🙂 Or a bit of pumpkin puree 🙂
Beside nuts, you also need dates, and something that can unite the entire mixture. The best thing for that is butter…I used almond butter, but you can use any other (hazelnut butter, coconut oil, sunflower butter etc.)
I did not put much butter. The jar that I used lasts for a long time when I make raw pastries like these.
I cleaned the dates from pits.
Then it was blender’s turn. I put together all the nuts and dates with two more spoons of almond butter and a spoon of quality cocoa and mixed until I got a smooth mixture.
I added a bit of salt to that mixture because cocoa loves it and salt makes cocoa taste stronger.
Extra flavour with…
Don’t forget a teaspoon of vanilla extract or vanilla flavour if you don’t find the extract.
You have to be able to shape the mixture into small balls, without them falling apart.
Then, when I shaped the entire mixture into balls, I rolled them into cocoa…but you have other options…for example coconut, crushed almonds, hazelnuts…chocolate crumbs etc….
