Is there a person who doesn’t like a burger? With all the spices and greens…and if you it spice up a little bit with some chili flakes…mmmmm…yummy. I would eat ten of them 🙂

I love a juicy and creamy dish. Because of that, I wrote this recipe with such pleasure 🙂 .

Easy PREPARE

components

  • 2 eggs (for veggie option 2 TBSP ground flax seed and 6 TBSP water -mix it and put in the fridge for 30 minutes)
  • 400 gr pumpkin puree
  • 1/2 cup black beans
  • 1/4 tsp red chili pepper (or chipotle) + 1 tsp for aioli sauce + 1/4 tsp for guacamole sauce
  • 1 clove garlic, minced
  • 2-3 spring onions
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning (Provencal spice)
  • 1/2 tsp paprika
  • 1/4 salt + pinch of salt for guacamole and aioli sos
  • 1 TBSP olive oil for guacamole sauce and oil for frying
  • 1 cup rolled oats
  • 2 ripe avocados
  • 1/3 cup mayo (substitute for veggie is humus)
  • 1/3 cup mayo (substitute for veggie is humus)
  • 2 tsp fresh lemon juice
  • 1 TBSP tomato paste
  • 1 tsp balsamico vinegar
  • 1/4 tsp cayenne pepper
  • lettuce for serving

Instruction

  1. Cut the pumpkin into the same size of cubes due to the baking.
  2. Bake the pumpkin cubes in a preheated oven at 180 ° C for about 20 minutes.
  3. Then take them out of the oven and make a puree in the blender.
  4. Add two eggs (or egg substitute for a veggie option), half a measure of black beans, add spices: garlic powder, clove garlic, red chili ground pepper (or chipotle), Provansal mixture, plain ground pepper.
  5. Place puree in a separate bowl and gradually add the remaining measure of black beans, rolled oats, cut spring onions, salt and pepper and mix all together manually.
  6. For optimal burger shape, take 2 TBSP of puree and squeeze tightly, rotating and press it into a disc.
  7. For guacamole sauce mix all together in the blender avocado, red chili pepper or chipotle, lime juice and olive oil.
  8. For aioli sauce mix mayo (or hummus for substitute), 2 TBSP lemon juice, balsamic vinegar, salt and cayenne pepper.
  9. You can use both of these sauces to serve this amazing burger or you can add whatever you like. Enjoy every delicious bite!

If I knew for sure that every bite of burgers wouldn’t end up on my hips  I would eat them every day 🙂

But it was worth it!

I ate 3, but it was possible because this was a totally cool and healthy variation of hamburgers.

How to make homemade pumpkin burgers?

Divided into 3 very easy parts:

  • Pumpkin burgers
  • Guacamole sauce
  • Aioli sauce

The word sound like something very difficult but at the end, it would be fun for you how easy it is to make. I made a video for you as well and it is below the text and of course on my YouTube channel.

This is a really worldwide dish. Pumpkin originally comes from the USA, Guacamole from South America and Aioli from the Mediterranean coast.

Teamwork wins everywhere, even in the recipes 🙂

What do you need?

Without fail is fresh lettuce.

Avocado, lime, mayonnaise (substitute for veggie recipe), pumpkin puree, black beans, garlic powder, clove garlic, eggs (egg substitute in veggie varieties is banana, tofu cheese, flax seed) chili pepper or chipotle, rolled oats flakes and some spices.

These veggie options are really phenomenal and tasty. One banana substitute 2 eggs, with flax seeds the win combination is 1 spoon of flaxseed and 3 tsp of water and finally the third option to substitute 1 egg is 1/4 cup of peeled tofu cheese.

What I did first?

I carved the pumpkin into cubes and baked them in the heated oven at 180 °C for about 20 mins to half an hour. The cooking time depends on the size of cubes. The aim was to make pumpkin soften and mash it.

Then, I put the baked pumpkin into the blender and mashed it.

Afterwards, I added some black can beans to add some a Mexican touch to it, as well as two eggs to bring it all together. Leave some beans on the side to add it to the mixture at the end, thus making the burgers crunchier.

I spiced it in my way ( a little bit of chili, some powder garlic, Provencal mixture, pepper…) You can certainly add some of your own spices.

When the pumpkin was mashed, I added the rest of the beans to make it look more rustic and crunchy :).

Then I added spring onion, oats, salt, pepper, and left it on the side to wait for its turn for cooking while I quickly prepared two sauces.

Guacamole sauce

Basically, I always prepare Guacamole in the same of similar way, depending whether I would prefer the simpler or the simplest sauce 🙂 . There are no complex Guacamole recipes.

This time I added some heat and some olive oil, along with lime and avocado. No struggling, just let the blender do it all 🙂

Aioli sauce

The true Mediterranean recipe (Spain, French and Italian coast), juicy and refreshing. A true heartbreaker 🙂

Traditional aioli sauce recipe is not prepared in blender, but with pestle and mortar. Garlic, salt, and olive oil.

Stew it all well. There were some later variations with mayo. This is an even more contemporary one, but the basic idea is the same. Some spices, mayo, lemon+balsamic vinegar (white), salt, tomato paste and put it all in blender. Since the burgers already contain some garlic, I didnt add this ingredient to the aioli sauce recipe.

I mixed it all in and prepared the sauce 🙂 It did look like an aioli, just turned a little more red :).

Unusual spices

Chipotle – it is mentioned in the video, but you can use any hot pepper instead. You can also buy it.

People use it in traditional Mexican dishes and in dishes inspired by Mexican cuisine.

Provence or Italian seasoning mixture –  you can find this mixture anywhere. In case you still do not have it, you can also mix in some dried herbs: dried basil, oregano, rosemary, garlic, chili pepper, white pepper, and you get more or less your own seasoning mixture.

Cayenne pepper– red powder and hot, so it can be a good substitute. And you can certainly find this seasoning in our stores.

The Finale

I left all of the sauces on the side and dealt with the pumpkin burgers again. For the grand finale, all I had to do was shape the burgers with my hands and cook them on both sides just enough to turn a little brown.

Three ways to serve pumpkin burgers

If you prefer the veggie option, the healthier of the healthy ones, then this would be my suggestion. In these pumpkin burgers, there are egg substitutes (banana, flax, or tofu).

In case you prefer the regular healthy variation and not my veggie suggestion, then my suggestion is to put your burger in a bun.

Or a crispy, well-done baguette from French bakery ♥ , and then some more red chili pepper 🙂 .
