First, I have to explain what I mean with pork rinds…One of my favorite Serbian dishes is fried pork rinds. They are a kind of pork ‘crisps’, with fat thermally extracted from the lard.
Pork rinds are very popular in Serbia, where they are known as čvarci.
Version of “duvan čvarci’ exists in West Serbia, but it is extracted meat that is separated from fat. It is a byproduct of pork rinds.
Duvan čvarci are the best 🙂
Have you ever heard of “finger food”?
You probably have.
This is the modern term for an old thing, all the food that can be eaten directly by using hands. It is in size of a snack or two, depending on how big bite your is 🙂
For example, my bite is sooo biiigg…so be aware that if I ask you to give me a little bit of something that you have in that moment….I’d think twice…I would not give it to myself :).
Examples of generally accepted finger food are miniature meat pies, sausage rolls, sausages on sticks, cheese and olives on sticks, chicken drumsticks or wings, spring rolls….and of course, everything from the fridge when you take it in the middle of the night when nobody is looking.
As the years go by and we are getting older, our socializing with friends is followed by some food or drink. Whether going to a restaurant or staying at home.
I love to cook for my family and friends and their opinions mean a lot to me.
This time was a same…with a glass of good wine, and some creative ideas for finger food party we stay longer together to chat 🙂
How it’s made – creamy spread cheese pork rinds
It has to be something unexpected. When you have such small bites the only thing that can be unexpected is flavour.
So, I was playing with flavours and started with savoury and finished with country style adding chopped shallot on top and the inside of the creamy spread cheese…..who cares about the smell 🙂 of the onion.
The most important thing is that everything can be prepared in a couple of minutes.
For the creamy spread cheese, you will need a little bit of gorgonzola cheese, a little bit of white regular cheese (from cow’s milk) and sour cream. You should mix all these ingredients in a smaller bowl.
Add salt according to your taste.
But the additional flavour you will get from the mixture of spices.
This time I was using shallot, mint, and thyme. All these spices I chopped very finely and I mixed them with cheeses and sour cream.
The other option was with chili…I chopped finely and added the creamy cheese.
With the third option I put a little bit of exotic flavour and added a pinch of turmeric for the red color, and it looked sooo different.
There are lots of options for the base where you put creamy cheese and “duvan čvarci” pork rinds.
I bought rice snacks (such as these in the pictures)…you can buy them everywhere also with different flavours.
Steps are…firs flavored creamy spread cheese, then a little bit of “duvan čvarci” or pork rinds, chopped shallot, and chili …then cover with olive oil and pour over a glass of wine.
Substitution for rice snacks can be toasts, crackers…which is for sure less important.
The most important thing is that you spend some awesome time with your friends.
