Salmon baskets with pickled onion
One of the first culinary books I have bought was the book called Gastronomic journal by Voki Kostić. If you belong to younger generations, then you probably don’t know who Voki Kostic is.
Voki is a composer, who started cooking because he was struggling with his weight. One of his most popular books is called „How I ate myself“, but it is not the only book he wrote.
components
- 300 gr of salmon (or some other type of fish, you can use smoked fish, too)
- 3 spoons of sour cream
- 80 gr of cream cheese
- 2 spoons of mayonnaise
- 6-7 pickled onions
- 3 pickles
- 1 spoon of chopped chive
- salt, white pepper
- Dough baskets (or pie crust)
- powdered chanterelle -optional
Instruction
- If you have fresh salmon, first you need to thermally process it on each side. If you have smoked salmon, you don't need to thermally process it.
- Put all the ingredients into a blender, except salmon, chive, and baskets. Mix them well.
- Chop the salmon together with chives and add to the mixture.
- Fill the baskets with the mixture, decorate with pickled onions and chives, and leave them in the fridge for an hour (optional).
- After that, everything is ready for tasting.
He is also a very famous composer, and his music can be heard in many cult movies and TV shows: Eagles Fly Early, Who’s Singing Over There, Part-Time Work, Truckers tv series…
I came across this recipe for the first time in the Gastronomic journal. Since then, I have prepared it a million times. Every time, I would add or subtract something depending on the ingredients I have.
If you ask me, I don’t even know why I am putting this salmon recipe on my blog only now.
This recipe is amazing, and every time I make it we love it even more.
Salmon baskets
This time I wanted to marinate salmon. I removed the greasy and less pretty parts. Of course, I did not throw anything away, I used these removed parts in this recipe. By the way, besides fresh salmon, you can use smoked salmon or any other fresh or smoked fish. I also think that other types of meat would be a great choice.
I am telling you, this recipe is incredible and for every occasion.
Besides salmon, you will need a bit of sour cream, pickled onions, pickles, cream cheese, and mayonnaise.
I also added some spices I had, such as dry chanterelle and chives.
What is also worthy of attention in this recipe are the baskets.
IKEA baskets
I didn’t make baskets myself, I came across them when I was in IKEA.
So I decided to try them out, why not.
They are very thin, in the size of a bite, and very practical for things like these.
They are crunchy and they absorb perfectly the moisture from salmon and the rest of the ingredients. We were amazed by them. So, I bought 4 more boxes of these baskets the next time I went to IKEA. I will make this recipe for New Year’s eve for sure.
If you can’t buy the IKEA baskets, pie crust is an ideal solution.
Besides the crusts, you will also need the muffin mold (smaller). Coat the crusts with egg and milk, and then cover the muffin mold. Bake them in the oven at 180°C for about 10 minutes and fill with the content from this recipe.
