Meatballs tomato soup is tasty and the best and easiest method to prepare
Meatballs and the tomato soup are two dishes that are often prepared in our home. This venture of mine was how to combine these two dishes into one and not put too much effort and money into it.
If you think that food bloggers always have two appetizers, 3 main course options, a dessert and something after dessert you are mistaken. Usually, there’s much less. And sometimes we need to go for simple things as well.
components
- 1 can of white beans
- 1 spoon of olive oil
- 1/2 of chopped onion
- 2 garlic cloves
- 1 vegetable or chicken stock cube
- 1 cup of water
- 1l of tomato juice ili 1 tomato can(in this case add a few glasses of water)
- 1 finely chopped carrot
- 1 spoon of dry basil
- 1 teaspoon of dry parsley
- 1 teaspoon of dry oregano
- 1 laurel leaf
- 1/2 of a spoon of salt
- a little bit of pepper
- 12-15 turkey meatballs (ready to use ones or homemade-you can find the recipe in the text)
- 1 cup of smaller sized pasta
- 1/4 cup of freshly grated parmesan (optional)
- 1 spoon of honey
Instruction
- In a heated and oiled pan bake the meatballs on all sides.
- Then take them out and leave them aside.
- In the same pan add olive oil and stew the onion, garlic and carrot.
- Add mashed white beans, stock cube, tomato juice, laurel leaf, oregano, basil, a bit of parsley, salt, pepper and honey. Add water and grated parmesan. Cover the pot and leave to boil.
- When it boils, reduce the burner temperature and add baked meatballs in the soup and cook for about 15-20 minutes more.
- Near the end, add pasta and cook according to the instructions on the pasta packaging. Pasta should be al dente.
- When everything is done, take the laurel leaf out of the pot and add a bit of fresh parsley.
- Serve with freshly grated parmesan.

What did I do to make this unique broth, meatballs tomato soup?
I have been making soups and broths for years now. This broth is unique in a sense that it’s not just tasty – it’s delicious, easy to make and not expensive.
And it’s also very nutritious…
What do you need?
A can of white beans. I could, of course, make my own beans, but for that, I would need more time. So I just mashed the beans and no one else but me knew that they were there. I used them instead of starch.
Then, onion, garlic, vegetable or chicken stock cube, tomato juice, carrot, parsley, oregano, laurel leaf, basil and a little bit of honey. All these spices can be dry, but can also be fresh, depending on what you have.
The inevitable part of every dish are salt and pepper.
Pasta, but smaller sized.
And Parmesan for serving, but this is of course optional. I had it at home, so I put it.
I knew I would be asked to put meat, too….so I opted for turkey meatballs.
You can buy turkey meatballs in supermarkets as a ready to use product, and we have been over HOW TO MAKE HOMEMADE MEATBALLS a long time ago.
This time I cheated – I bought the ready to use ones, so that I could cut down the preparation time.
Meatballs and how to prepare them
If you have time make HOMEMADE MEATBALLS the day before.
So, first of all, I baked the meatballs on every side in a heated and oiled pan. Once they were baked, I took them out and left them aside to wait for their turn.
Beans
I took them out of the can, put them in the colander and washed them. Then I put them in the blender and mixed them. I added a few spoons of water to make it go more smoothly.
Tomato soup
I stewed the onion and garlic, and added chopped carrot. Then I put the mashed beans, stock cube, tomato juice, water, honey and all the spices together with the grated parmesan. I left everything to boil and then reduced the temperature, added the meatballs and covered it. Cooked it for about 20 minutes.
I added pasta and cooked it according to the instructions for the pasta preparation so that it can be al dente.
At the end, I removed the laurel leaf out of the pot.
The meatballs tomato soup is very rich and nutritious, so you don’t need anything else for lunch besides a bit of baked bread.
