Easy carrot cake without added sugar
Carrot cake is a cake that can also be used for breakfast, snack or dessert.
This one is very simple to make. All the ingredients should be whisked into a bowl and poured into your favorite molds and baked at 180 ° C for about 30 minutes. But you have to check time by time. The baking time depends on your molds and the thickness of the mixture in them.

- 300 gr carrots
- 100 ml buttermilk
- 2 eggs
- 80 gr coconut butter
- 30 gr olive oil
- 40 gr honey
- 150 gr chestnut flour
- 110 gr muesli
- 1 baking powder
- 1 tsp cinnamon
- 1 tsp ginger
- 70 gr nuts (macadamia, almonds..)
- 1/2 cup dried cranberries
- TOPING:
- 300 ml whipped cream
- 250 ml maskarpone cheese
- 5 Tbsp Nuttela cream
- 4 Tbsp pistachios paste
- 3 lemons
- 1 cup of water
- 1 Tbsp honey
- DECORATION:
- Mint, coconut and strawberries
Instruction
- Make buttermilk by mixing Greek yogurt and lemon juice and set aside for 20 minutes before baking.
- Wash and peel the carrot. Cut it or chop it in a chopper machine.
- Combine carrots, buttermilk, eggs, coconut oil, olive oil, honey, flour, muesli, baking powder (you can optionally add 1 teaspoon of baking soda), cinnamon, ginger, cranberry, macadamia in a large bowl. Make a homogeneous mixture of all manually and with a mixer. Pour into the molds and bake for 30 minutes on 180°C.
- For the topping base, combine mascarpone cheese (can any other cream cheese) and whipped cream and whisk. Divide this mixture into 2 parts.
- Put Nutella in the first part and pistachio paste in the second. So you've got two simple toppings already.
- Make syrup from lemon juice (3 lemons, can more), cups of water, spoons of honey. Put it all together in a saucepan and cook until the water has evaporated and the liquid is reduced.
- You can decorate as I did with. Use a piping bag and nozzle that you prefer and put the toppings over the carrot cakes.

In these quarantine days, I tried to make a carrot cake from the ingredients I had without going outside but keeping them as healthy as possible.
I’m not telling you that there are no „unhealthy“ things, but they are kept to a minimum and can certainly be thrown out.
The most insane things are in the toppings 🙂
What did I put in the carrot cake?
First and foremost plenty of carrots. I cleaned the carrot, put it in a chopper and chopped.
Then buttermilk. I made myself the simplest way. By mixing Greek yogurt and lemon juice. And then I left it to stand for a while before using it.
Eggs, flour, are also needed. My flour is chestnut flour. If you want to change flour, I recommend using a better quality of flour or combinations of them (spelt,rye …). I combined the chestnut flour with the musli I had without throwing it away.
The spices raise this cake to a slightly higher level. I put cinnamon and ginger.
You also need 1 baking powder. I didn’t have baking soda. But if I had, I would have put one flat teaspoon.
Nuts and dried fruits are a must. I had macadamia nuts and dried cranberries.
After all I combined the oil. I put more coconut and less olive oil.
Toppings are made in 5 minutes in a combination that comes to your mind.
How to make carrot cake?
As I promised you at the beginning.
Very simple!
Combine all the above ingredients into one large bowl. First, by hand, then use a mixer and mix them into a homogeneous mass. Fill the molds.
Bake in a preheated oven the way we initially agreed.
How to decorate a carrot cake?
I did it in three ways. And I don’t know to tell you which one was the best.
Common to the both toppings is that they are made of whipped cream and mascarpone cheese (you can have any other cream cheese). Just mixed them together.
I divided the final mixture into two parts and put 4-5 full spoons of…..in each …
I option
Nutella URAA!
And whisked all into a homogeneous mixture.
Additional decoration was mint and coconut.
II option
Butter / Cream of pistachios/ Pasta of pistachios. Then Nutella in the middle and decoration of baked coconut leaves.
III option
It has nothing to do with whipped cream and cream cheese, but it has to do with syrup. Which I made from lemon juice, honey, and some water. Like a baklava dressing.
You will see how good it goes with carrot cake. For me, a soaked carrot cake with this syrup is a real discovery.
There are ten more ways to do this …
For example. add peanut butter to that cream cheese and whipped cream. Then you ground the sunflower seeds and also add … or various butter, sesame, almond, hazelnut … etc … etc ..
And then those classic ways with frosting and powdered sugar.
The options are millions 🙂

Here as I write all this, another idea came to my mind … if you want to make salty option…Throw out honey and dried fruits, add some seeds like sunflower or similar. And make the topping from whipped cream cheese (you will need softer cream cheese) and put grounded sunflower, pumpkin seeds, sesame seeds, etc …
