Thus, the roasted pepper recipes and dishes are the most popular dishes in the Balkans. The traditional pepper baking for winter preserves is already over, so if you didn’t bake them on time, you will have to steal them from those who did.
This year I really committed myself to baking and stuffing peppers as well as to making PEPPERS WITH CHEESE.
In my opinion, these are the best roasted pepper dishes that are quick and easy to make while still enjoying every bite.
What do all these recipes have in common?
Roasted red, green or yellow peppers, it doesn’t matter if they were baked in the oven, hot plate or grill. The important thing is to put them in the nylon bag after baking and leave them aside to cool down.
Once they’ve cooled down they have to be peeled and washed…You can choose whether to keep the seed and petiole depending on the recipe…
Roasted pepper recipes
Peppers with kaymak
For this recipe, you will only need old kaymak and a few roasted red peppers that you previously peeled and cleaned from petiole and seeds.
Then, every time before making peppers (already roasted) for a dish I drain them a little bit…I put a strainer to remove the excess water…
I did not tear them apart for this recipe, but you can do that for sure.
Then, in a saucepan or a frying pan, I heat up a little bit of olive oil and put in the drained peppers.
Then, I stew them for about 2-3 minutes on all sides and turn off the burner. Right after that, I add a few spoons of kaymak to melt in the warm saucepan and stir constantly.
I do not add salt because kaymak is salty enough, but I do add a bit of pepper and serve.
In fact, sometimes this is an entire meal for us, cause it’s very strong and you can dip bread into it.
You can also add a bit of shallot or fried bacon if you like.
Roasted peppers with garlic
Or as my grandma taught me”lučane paprike”. I think there isn’t a child that doesn’t like these peppers. The grown-ups, on the other hand, hesitate in eating them because of the amount of garlic. So, most often they are eaten for special occasions or at home.
In this recipe, you can put as much garlic as you want…I am quite moderate so I put about 2 bigger garlic cloves on 8 bigger peppers.
Beside garlic I put parsley, 2 spoons of vinegar (white balsamic, but you can also use apple vinegar), 3 spoons of olive oil and salt, if necessary.
I arrange peppers in a bowl, pour the garlic, vinegar, olive oil and parsley mixture over the peppers and let them be for a while. This method allows all the flavours to unite.
They are ideal as a salad with roast or rolled pork. In fact, they are ideal for everything.

Romesco roasted peppers sauce
Romesco sauce isn’t a traditional Balkan recipe, but it is excellent because you can keep this sauce in the fridge and it has many uses.
- You can eat it with overbaked rye or white bread, as you like it
- With sardines just like me, but also with some other fish
- Or pasta, just like the Italian pesto
- With grilled turkey or chicken
- As a dip for tortilla chips
- Or with fresh vegetables
