Mexican cuisine is one of favorites. I often have some food in the Mexican style on the menu. My children love it very much. Now, my guests do to 🙂 :

And then we have expanded the list with one more meal which is exactly this one- ground turkey and avocado Mexican pie.
This is a quick and an easy recipe to prepare. We are using this recipe to prepare our main dish during the day, however this could be great even for a dinner or as an appetizer when you have guests.
it is crispy and light and full of healthy ingredients.
How to make Ground turkey and avocado Mexican pie?
The first and the most important step is to get all the ingredients. This ground turkey Mexican pie is not seasonal, so it can be prepared throughout the whole year.
Ground turkey meat. Instead of turkey, you can use any other.
Red onions, chili peppers, corn, avocado, spinach, red pepper, coriander, onion, garlic, grated cheese (cheddar or gouda), some black beans (can be canned), sour cream for the sauce.
We have to cut everything into pieces. This is the hardest part of this recipe.
Then we cook.
Put olive oil in a large skillet bowl and place over medium heat. Once hot, add garlic and red onion and after 2 minutes add ground turkey and red pepper.
Temperature is on medium and we have to simmer for a few minutes.
At the end add black beans from the can, corn, and spinach.
Stir occasionally
On the phyllo pastry or egg rolls put one 1 1/2 tbsp of meat, cover with cheddar and roll up at the end.

Before oven, it looked like this. I didn’t try to have all pieces of the exactly same size and look. Top the phyllo pastry or egg rolls with whisked egg, for the golden brown crust.
Once baked, they look very crispy and rustic. I’ll bet you in a chocolate that you’ll grab it immediately.
At the end, we have to complete our avocado sauce and we are finally done with preparing lunch.
Of course, we need some avocado for the avocado sauce (from the beginning of the text), sour cream, lime, onion and garlic powder, salt, coriander. All this ingredients mix in the blender.
I cannot take it anymore, and I have to try it now, I can’t just watch :), my eyes are so big 🙂 .
